Salted Pretzel and Infused Chocolate Stuffed Cookies

The base of this cookie is simple and classic, but the salty pretzels pair wonderfully with the gooey rich chocolate and soft center. Read the instructions carefully to ensure proper measurements and consume with caution.

Ingredients

  • ½ cup unsalted butter, softened
  • ½ cup light brown sugar, packed
  • ¼ cup granulated sugar
  • 2 large egg yolks, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup all purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • Mojo Salted Caramel Chocolate Bites, Mojo Hazelnut Chocolate Bites, or Choice Infused Chocolate Covered Pretzel Bites
  • 20 pretzels
  • Flaky sea salt

Instructions

Preheat the oven to 350 degrees and line two baking sheets with parchment paper. Beat the butter, brown sugar and granulated sugar with an electric mixer until fully combined and fluffy. Add in the egg yolks and vanilla and beat until just combined. Scrape down the sides of the bowl with a rubber spatula. Add the flour, baking soda and salt and mix on low speed until no dry flour bits remain. Cover the bowl and place in the freezer for 10 minutes. Scoop out the dough one tablespoon at a time and divide into 20 dough balls. Working one piece at a time, chop your choice of Mojo Salted Caramel Chocolate Bites, Mojo Hazelnut Chocolate Bites, or Choice Infused Chocolate Covered Pretzels. One half of a 10mg piece of chocolate will be chopped and put into one cookie dough ball, ensuring each cookie has 5mg of chocolate. A whole 3mg piece of chocolate covered pretzel will be chopped and put into one cookie dough ball. Stuff the chopped pieces into each cookie dough ball by hand and one at a time to ensure proper measurements.  Place the finished cookie dough balls evenly on the lined baking sheets with a couple inches between each cookie. Gently press a pretzel into the top of each dough ball. Bake in the preheated oven for 9-10 minutes or until the edges are slightly golden. The centers will still be soft. Remove from the oven and immediately press the pretzels down into each cookie with a spoon and sprinkle each cookie with the flaky sea salt. Let cool on the pan for 5 minutes before moving to a wire rack to cool completely. Consume with caution.
